St. Moritz Gourmet Festival: James Kent at the Carlton Hotel St. Moritz

St. Moritz has announced the host country for the St. Moritz Gourmet Festival 2017 as: ‘USA – Discover THE Best from the West’ various hotels in the village will welcome world-famous and award-winning chefs to curate a special menu during the festival.

The Carlton will welcome one of the world’s most famous chefs James Kent alongside their own head chef Gero Porstein to inspire festival guests with their culinary skills during the St. Moritz Gourmet Festival 2017. James Kent is the Executive Chef at Daniel Humm’s restaurant The NoMad, in the New York hotel of the same name. Here, his cookery skills have been awarded one star by Michelin, besides other distinctions. Furthermore, the James Beard Foundation nominated James Kent for the ‘NYC Best Chef 2016’ award.

NoMad’s signature dishes such as ‘roasted chicken stuffed with black truffles and foie gras’ and ‘fruits de mer’ illustrate his philosophy: ‘My goal is to source the best ingredients and treat them with integrity. So we take something usually considered commonplace, the simple roasted chicken, and elevate it to make it the most delicious bird you have ever tasted. James Kent began his career in the kitchens of major chefs with placements in London and Paris.

In 2010, the smart New Yorker won the Bocuse d’Or USA and reached tenth place at the world championship in Lyon. He has worked in Daniel Humm’s team for seven years and was latterly the chef de cuisine of the three-star restaurant Eleven Madison Park, before taking over the responsibility of the NoMad cuisine.

It is with great pleasure that The Carlton will welcome the Michelin star-awarded chef from New York at restaurant Romanoff from 31 January to 2 February 2017.
