The Den Bengaluru, a state-of-the art luxury hotel for millennials and globetrotters, is pleased to announce the appointment of James Olivera as Patisserie Chef. A consummate pastry expert with over 14 years of culinary experience, Chef Olivera will be responsible for the creations and concepts of the hotel’s patisserie boutique – The Deli and hotel’s confectionary offerings. Chef Olivera is known for his signature dishes like, Raspberry Chocolate Tart – made with 66.8% single origin Brazil Cocoa and Mango & Chilli Bavarian – infused with various liquor.

Having built his culinary career at several leading five-star hotels around the world, Chef Olivera brings to the role many years of pastry expertise. He has worked with notable properties like- The Diplomat Radisson Blu Hotel, Manama, Kingdom of Bahrain; Atana Hotel, Dubai, U.A.E; Morde Foods Pvt. Ltd. – Cocoa and Chocolates as Regional Pastry Chef; LUX Maldives as Sous Chef Pastry; The Ramada Jumeirah Hotel as Pastry Chef; The Ritz Carlton Bahrain Hotel & Spa as Chef De Partie; Desert Palm Hotel & Resort by Per Aquum, Dubai as ‘Demi-Chef-de-Partie’; One & Only Royal Mirage Hotel, Dubai and J.W. Marriott Hotel.

Chef Olivera has been recognized for his exemplary contribution to the industry and has been awarded the Certificate by Highfield Awarding Body for Compliance, Dubai, UAE for successfully completing the Person in Charge (PIC) Level 3 training. He has also been presented a Silver award for the category of display on the event of Three Plated Dessert Presentation-Organized by the “Chef Masters Salon Culinaire” Bahrain. Additionally, Chef Olivera has also been Awarded Dish of the month winner for the month of February 2010 at The Ritz Carlton Hotel, Bahrain.
